Almond Tea Latte

INGREDIENTS:
  • 8 Irish Breakfast tea bags (or 8 teaspoons of loose Irish Breakfast tea)
  • 4 cups (32 oz.) water
  • 1 oz. almond syrup
  • 1 cup Whole milk
  • Ground nutmeg or chocolate

Directions:

Prepare a strong tea with 8 tea bags in 4 cups (32 oz.) boiling water. Steep for 5 minutes. Remove tea bags. Pour 5 oz. of hot tea into each tea cup, add almond syrup and stir. Steam whole milk and top tea with a little steamed milk. Garnish with whipped cream if desired and ground nutmeg or cinnamon.

Tea Bar

Need new idea for your next afternoon get together? Create a tea bar.

Offer a variety of teas. I like to offer 6. I start with a simple black tea, green tea, and 4 wonderful herbal teas such as jasmine, spearmint, peach paradise, and very berry. Find a variety you are comfortable with or even create a theme. This allows guests to mix and match teas if they choose. Place each tea in an individual small bowl with a teaspoon. Keep a teapot with hot water available. I like to use the I-pots from Teaporia. These can be placed in the microwave allowing me to reheat the water if needed.I also have ice ready to go for any guest wishing to have iced tea instead hot tea. Offer a variety of condiments for tea such as simple syrup, candied lemon or orange peel, mint leaves, and cream.

Candied Lemon and Orange Peel:

2 lemons
1 large orange or 2 small oranges
2 cup simple syrup (recipe below)

Using a vegetable peeler cut the colored flesh part of the lemons and oranges from the stem end down to the navel end, forming long 3/4 to 1-inch strips. Bring a heavy small saucepan of water to a boil. Add the peels and cook for 1 minute. Drain and then rinse the peels under cold water. Repeat cooking the peels, 2 more times, in the saucepan with fresh boiling water and rinsing under cold water.

In the same pan combine the peels with 1 cup of simple syrup. Simmer over medium-low heat until the peels are soft, about 15 minutes. Using tongs, transfer the peels to parchment paper to dry slightly, about 1 hour. 

You can prepare the peels separately.


Simple Syrup:

1/2 cup water
1 cup sugar

In a saucepan combine water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator for up to 2 weeks.

Tea Leaf Reading

The art of tea leaf reading is centuries old. While it's highly respected in the east, its popularity was lost in the west with the invention and use of the tea bag. As the use of loose leaf tea is on the rise again, tea leaf reading is regaining popularity.

Reading tea leaves has traditionally been practiced by the women in the family at gatherings of family and friends.

To see what your cup of tea has to say about the future, follow these simple steps:


1. Brew loose leaf tea in a pot and pour; unrestrained, into your cup.

2. Drink all but the last sip, leaving a teaspoon of tea and the leaves in your cup.

3. Swirl the tea and leaves three times counter clockwise.

4. Turn the cup over and place on the saucer. Wait for the tea to drain out.

5. Turn the cup right side up and examine the pattern of the leaves.

6. Leaves near the top deal with the near future, leaves on the bottom of the cup, the distant future. Leaves near the handle are said to relate to the home.

7. The formation of symbols in the leaves is used to tell the future. A few include:
  • Triangle~inheritance
  • Ladder~promotion
  • Star~good luck
  • Ring~marriage
  • Tree~success, happiness
  • Cow~prosperity
  • Dog~a good friend
  • Cat~treachery
  • Umbrella~shelter

Sangria Iced Tea

A sangria is a delicious drink during the hot summer months. Bring this beverage to your next party.

Sangria Iced Tea

1 10-oz pkg frozen strawberries in juice, thawed
2 cups water
3/4 cup sugar
1 navel orange, sliced
1 large lemon, sliced
4 Orange Pekoe tea bags from Teaporia (or preferred flavor)
2 cups red wine
2 cups lemon-lime soda

Puree strawberries in blender. Combine water and sugar in a saucepan and bring to a boil, stirring, until sugar is completely dissolved. Add fruit slices and boil 1 minute. Remove saucepan from heat and add tea bags. Cover saucepan and let stand 5 minutes. Remove tea bags. Let cool. Combine the tea mixture, red wine, and strawberries in a pitcher; chill. Gently stir in the lemon-lime soda. Makes 2 quarts.

Can be prepared with a red grape juice instead of wine for a non-alcoholic drink. Great for baby showers.

Good for your skin

German researchers believe that the polyphenols in black, green, white, and oolong tea neutralize the free radical in skin that cause redness and flakiness. They also believe these compounds promote the formation of skin-plumping collagen. It is also believed by many that these same polyphenols reduce the risk factors for cardiovascular disease. Enjoy 2 - 8 oz glasses of iced tea daily this summer for a more youthful glow.

Sun Tea:

Place 4 to 6 tea bags per 2 quarts into a glass container. Fill with water and cap. Place outside in the direct sunlight for about 3 to 5 hours. Move the container if necessary to keep it in the direct sun. When the tea has reached its desired strength, remove from sun and put it in the refrigerator. Serve over ice with lemon and mint. This is best when outside temperatures reach 95 degrees.

Sweet Tea Pork Loin

Put a tea-riffic twist on your next meal with a Sweet Tea Pork Loin.

Sweet Tea Pork Loin Recipe:

1 gallon water
1 cup kosher salt
2 cup granulated sugar
4 oz. Mango Mist loose tea from Teaporia
½ gallon ice (approx 4-6 cups)
3½ - 4 lbs. boneless pork loin
2 tbsp. canola oil

In a large pot, combine water, salt, sugar and tea. Bring to a boil, then remove from heat and let steep for 1 hour. Strain and transfer to a large plastic container and add ice. Cool brine to below 40 degrees. Brine pork at least 6 hours or up to 48 hours in the refrigerator. Remove from brine and pat dry. In large frying pan, heat oil. Sear roast on all sides. Place roast in 300 degree oven, covered. Roast 2 - 2 1/2 hrs.

Tea Tasting - Part 2

Tea tasting can be as extensive and detailed as wine tasting. During tea tasting you are looking for 4 main factors - look, feel, smell, taste.

Today we are going to talk about smell.

Smell the leaves before steeping. Do they smell grassy, smoky or sweet?

After steeping, take in the aroma of the tea deeply and enjoy the bouquet. Does the smell appeal to you? Examine the infused leaves for color and evenness. Color does not necessarily indicate the strength or body of the liquor, but every tea has a unique look, taste, and feel particular to that tea.

Over time you will not only smell quality but flavors that the mouth might overlook.

Tea Tasting 101 - Part 1


Tea tasting can be as extensive and detailed as wine tasting. During tea tasting you are looking for 4 main factors - look, feel, smell, taste.

Today we are going to talk about look and feel starting with the dry leaf.

You can tell a lot about tea by the look and feel of the the dry leaves. Take a few tea leaves into the palm of your hand and gently press the leaves with your fingers. A fresh tea will be spring back and less likely to crumble than older teas. Gently press some dry leaves in your hand. Most new teas are a little springier and less likely to crumble than an older teas.

What you want to look for in a dry leaf is - springy, curly, neat, blackish, clean, and leafy.

What you do not want to find is - mushy, ragged, grey, dull, uneven, easily crumbled

When learning about tea it is best to start with a black tea in my opinion. It is a common tea we are all familiar with and you will notice the differences quicker.

Peach Tea

One of my favorite iced teas is a peach tea. Its sweet and refreshing. My favorite way to prepare is to flavor a traditional orange pekoe tea with peach rather than go with a pre-flavored tea.

Here is a simple syrup recipe to flavor your ice tea:

1 cup sugar
1 1/2 cups water
1 can peaches, cut into smaller pieces (approximately 12 oz)

Combine all ingredients into sauce pan. Bring to boil over medium heat. Cook until sugar is dissolved. Reduce to low and simmer 10 minutes. Stir occasionally. Remove from heat. Let stand 30 minutes. Pour through a fine mesh strainer to remove fruit pieces.

I like to serve with sliced peaches for that added flavor.

This works great with several tea flavors. Raspberry and Strawberry are 2 other favorites this tastes wonderful with.
